Pancakes
These fluffy pancakes are so tender and sweet. It is our family tradition to make pancakes together on Saturday mornings and catch up on what we did throughout the week. Add some extra vanilla to the recipe and you will think you are having cake for breakfast.
Ingredients
2 cups flour
4 tablespoons sugar
3 teaspoons baking powder
½ teaspoon baking soda
Pinch of salt
1 ½ cups milk
5 tablespoons butter melted
1-2 tablespoons Mexican vanilla
1 egg
Butter to cook
Directions
Combine all the ingredients into a large bowl and mix with a wooden spoon. Ensure that all the flour has been incorporated well with the liquids, being careful not to overmix. It’s ok that the batter will remain a little lumpy.
Heat the skillet with butter on medium. Add the pancake batter using a 2-ounce ladle.
Once bubbles start to form on the surface of the pancake, you may flip it with a spatula. Add a slice of butter on top while it continues to cook on the other side.
Serve with your favorite syrup or honey.
